Gajar ki burfi/carrot burfi


Ingrediants

Grated Carrots 2 cup
khoya 1/2 cup
Milk 1 cup
Sugar 1/2 cup
Green Cardamom powder 1/2 tspn
Ghee 2 tblspn

Method

  1. Kadhaie me ghee ko garm karen . Usme grated carrot ko achchi tarah bhune ki uska paani sookh jaye.

  2. Ab usme milk add kare aur achchi tarah bhune . Milk thick ho jaaye to usme khuya mila den Aur chalati rahen ki niche lage na.



  3. Ab usme sugar add kare aur itna bhune ki mixture kadhaie se alag ho jaye usme chipke na. Phir usme ilaich powder daal de.

  4. Ek plate ya thali me jisme burfi set karni ho usme ghee laga den. Mixtur ko usme set kar de aur uspar kate huye dry fruit spread kar den.

  5. Thanda ho jaye to  usko burfi  shape me cut kar len...enjoy


1. Heat ghee in a kadhaie. Add grated carrot and fry till the moisture gets absorbed.

2. Now add milk and stir well. Cook in medium to high heat and stir occasionally, till the milk reduces completely and thickens.

3. Add khoya and mix well. Cook till the khoya melts and mixes well with the carrots and thickens.

4. Add the sugar amd mix well till the sugar melts and thickens.

5. Now the mixture start leaving the pan and thickens.  Add powdered cardamom nad turn off the flame.

6. Pour the mixture into the greased tray and spread evenly. Sprinkle almonds and cashew. Set it aside to cool.

7. Cut into squares  shape and serve.

Spicy dhaniya Aaloo


Ingrediants

Boiled potatoes 12-15 small
Onion 1 medium
Crushed Garlic 1 tspn
Grated ginger 1/2 tspn
Coriandere leaves paste 4 tblspn
Bhuna masala 1 tblspn
Garam masala powder 1 tspn
Red chilli powder 1/2 tspn
Curd 2 tblspn
Salt to taste
Oil


Method


  1. Ek pan me 3 tblspn oil garm karen usme potatoes ko fry karke alag rakh den. Onion ko grind karke paste bana len.

  2. Usi pan me garlic- ginger add karen. Phir usme onion paste , garam masala powder, red chilli powder aur salt add karen aur achchi tarah bhune.Phir usme dhaniye ki patti ka paste add kare.

  3. Jab masale se oil separate hone lage to usme curd aur bhuna masala add kare aur mix karen. Ab usme potatoes add kare aur zara sa pani daal kar kuch min. slow flame par  cook karen.....aur flame off kare den.

  4. Garma garm serve karen

1. Heat 3 tblspn oil in a kadhaie and fry the potatoes in it. Transfer in a plate and set aside.

2. Make paste of onion in a grinder.In a same oil add crushed garlic , grated ginger and onion paste and saute well.

3. Now add red chilli powder and garam masala powder and mix.

4. Now add coriander leaves paste and saute well untill the oil separate from masala.

5. Add bhuna masala and mix.

6. Add curd

7. Now add fried potatoes and some water cover the lid and cook about 2-3 min. Turn off the flame.

8.Enjoy yammy dhaniya Aaloo with parathas or rice.

Gajar ki kheer/ carrot kheer


Ingrediants

Grated Carrots 1 cup
Khoya / mawa 1/2 cup
Milk 4 cup
Sugar 1/2 cup
Green Cardamom powder 1/3 tspn
Ghee 1 tblspn

Method


  1. Ek kadhaie me ghee garm karen usme grated carrot ko daal kar achchi tarah bhun len ki uski raw smell chali jaye.

  2. Ab usme milk add karen aur thodi - thodi der par chalate rahe. Slow - high flame par cook karen.



  3. Jab milk thick hone lage to usme khoya/mawa add kar den aur achchi tarah mix kar den. Ab flame ko slow kar den aur kheer ko chalate rahe ki neeche jale na.

  4. Jab kheer thick ho jaye to usme sugar add karke kuch der cook karen aur flame band kar den saath hi ilaichi powder bhi daal kar lid laga den.

  5. Thodi der baad use garnish karke serve karen...laziz kheer taiyyar hai sabke liye..enjoy.

  6. 1. Heat gheen in a kadhaie. Add grated carrot and fry veary well on medium flame.

    Now add milk and cook on medium heat till carrots are done and milk is thick and creamy.

    3. Now add khoya cook few min.

    4. Add sugar mix well and cook few sec. and turn off the flame.

    5. Add cardamom powder mix well and cover the lid.

    6. Enjoy yammy kheer garnish with your favorite nuts...

Malaie methi matar


Ingrediants

Blanched methi leaves 1/2 cup
Green peas 1 cup
Onion 2 medium chopped
Green chillies 2 chopped
Ginger- garlic paste 1 tblspn
Garam masala powder 1 tspn
Cashew nuts 6 -7
Poppy seeds 1 tspn
Cumin seeds 1 tspn
Bayleaf 1
Green cardamom 1
Black cardamom 1
Cloves 2
Milk 1 cup
Fresh cream 2 tblspn
Salt to taste
Oil


Method


  1. Ek kadhaie me 1 tblspn oil garm karen. Usme zeera daale jab wo halka brown hone lage to usme kati huyi pyaz daal kar saute karen.

  2. Phir usme kati huyi hari mirch aur ginger- garlic paste daal kar saute karen. Phir usme kaaju aur khaskhas daal kar fry karen. Ab usme garam masala add kare zara der fry kare aur flame off karden.

  3. Ab is mixture me zara sa paani daal kar grind karen aur ek smooth sa paste bana len.

  4. Kadhaie me oil garm karen . Usme tezpatta , ilaichi , badi ilaichi aur loung daal den. Pir usme blanched methi leaves daal kar medium flame par fry karen.

  5. Ab usme matar aur namak daal kar kuch der pakaye ki matar zara si soft hone lage. Phir usme mixture ka paste add karen aur bhune.

  6. Phir usme doodh daal kar slow flame par cook kare jab doodh thoda thick hone lage to usme fresh cream daal kar 2- 3 min cook kare.

  7. Flame off kar den ..aur garma garm parathe ya rice ke saath serve karen.

1. Heat oil in kadhaie. Add cumin seed and saute.

2. Now add chopped onion.

3. Add  Green chilli and ginger - garlic paste and stir well.

3. Now add cashew nuts and poppy seeds and saute.

4. Add garam masala powder and saute few second. Turn off the flame.

5. Now make a smooth paste of the mixture.

6. Heat oil in kadhaie. Add bayleaf  , green cardamom, black cardamom and cloves.

7. Now add blanched fenugreek leaves and fry well.

8. Add green peas and salt according to taste. And cook few min.

9. Add masala  paste and stir well.

10. Add milk and cook in slow flame.

11. Now add freash cream and cook few min. turn off the flame.

And enjoy with paratha , naan or rice..

Creamy matar paneer



Ingrediants

Paneer 300gm (in cubes)
Green Peas 1 cup
Onion 2 medium finely chopped
Tomatoe 1 finely chopped
Garlic paste 1 tspn
Ginger paste 1 tspn
Garam masala powder 1 tspn
Red Chilli powder 1/2 tspn
Coriander powder 1 tspn
Bayleaf 1
Green cardamom 1
Black cardamom 1
Cloves 2
Fresh cream 2 tblspn
Salt to taste
Oil


Method


  1. Ek pan me 2- 3 tblspn oil garm kare. Usme paneer ke pieces ko halka fry kar len. Aur nikal kar alag rakh den.

  2. Usi pan me tez patta, badi ilaichi , choti ilaichi aur loung add karen. Uske baad usme kati huyi pyaz daal kar halka gulabi hone tak fry karen.

  3. Ab usme , Ginger- garlic paste add kare aur mix kare. Phir usme red chilli powder, garam masala powder aur dhaniya powder add kare aur achchi tarah mix karen.

  4. Ab usme kate huye tamatar, namak aur zara sa pani daal kar pakaye . Jab achchi tarah bhun jaye tab usme paneer daal kar mix karen.

  5. Ek alag pan me zara sa oil garm kare aur usme matar ko namak daal kar paka le.

  6. Ab paki huyi matar ko paneer ke saat daal den aur zara sa pani bhi daal aur cook karen.

  7. Phir usme cream add karen. 2- 3 min low flame par pakaye aur flame off kar den.Garma garm serve karen.

1.Heat oil in a pan and fry the paneer. And set aside.

2. Now in the same pan add bay leaf, black
cardamom, green cardamom and cloves.

3. Add chopped onion fry till it change the colour.

4. Now add ginger and garlic paste and saute well.

5. Add red chilli powder , garam masala powder and coriander powder and mix well.

6. Now add chopped tomatoes, salt and 1 tblspn water and cook very well.

7. Add paneer cube and mix.

8. In another pan cook green peas with a drop of oil and some salt.

9. Now add the grean peas in paneer mixture and mix it.

10. Now add fresh cream mix well and cook about 2- 3 min in low flame.

11.  And enjoy with chapati , rice or butter naan.
