Veg momos


Ingrediants


For the dough

Maida 250 gm
Salt 1 tspn
Oil

For filling

Onion 2 medium
Ginger-garlic paste 1 tspn
Capsicum 1 medium
Mashed paneer 1/2 cup
Cooked soya granules 1 cup
Black pepper powder 1 tspn
Soya sauce 1 tblspn
Chilli sauce 1 tspn
Salt to taste
Oil



Method

  1. Ek large bowl me Maida len usmen namak milayen aur thoda - thoda pani add karte hue soft dough banayen. Aur muslin cloth se dhak kar 30 min.ke liye alag rakh den.
  2. Ek pan me oil garm karen. Usmen kati hui pyaz daal kar halka gulabi hone tak fry karen. Ab usmen Ginger-garlic paste add karen aur mix karen.
  3. Ab usmen bareek kati hui Capsicum daal kar medium flame par cook karen. Jab Capsicum thodi gal jaaye to usmen mashed paneer daal kar mix karen.
  4. Ab usme soya granules daal kar mix karen saath hi black pepper powder, soya sauce aur namak daal kar kuch der cook karen. Flame band karke mixture thanda hone den. .
  5. Dough me one tblspn oil add karen aur haathon se thoda gundh len. Usko 25-30 bhagon me divide kare aur choti choti balls bana kar dhak kar rakh den.
  6. Balls ki 2-3 inch diameter ki thin pooriyan banayen uske center me 1-2 tblspn veg mixture rakhen. Ek taraf se fold karte hue choti si potli ki tarah ka shape den. Aise hi saare momos bana len.
  7. Steamer me ya kisi bartan me pani garm kren. Steamer pan ya steel ki channi me momos aise rakhe ki unke beech me thoda space ho. Ab inhe Steamer me ya jis pot me aapne pani garm Kiya hai usper rakh kar dhak den.
  8. Medium flame par 8-10 min tak steam karen. Momos tayyiar, Ab apni pasand ki dip ke sath garma garm serve karen.

Motton do pyaza


Ingrediants

Motton 500 gm
Onion 5 big finley chopped
Tomatoe 2 small
Green chilli 4-5
Garlic 6-7 cloves
Ginger 2"
Garlic paste 1 tblspn
Red chilli powder 1/2 tspn
Garam masala powder 1 tspn
Curd 2-3 tblspn
Bayleaf 1
Black Cardamom 1
Green Cardamom 2
Cloves 3-4
Black pepper 6-7
Salt to taste
Oil



Method

  1. Motton ko achchi tarah dho le. Ek cooker me oil garm karen usme 2 onion kaat kar daal den sath hi tezpatta, daal chini ki lakdi , loung , ilaychi hari aur badi ilaychi daal den.

  2. Pyaz gulabi ho jaaye to usme motton, garlic paste aur salt daal kar achchi tarah slow flame par bhune. Paani sookh jaye to usme dahi daal kar achchi tarah bhoone jisse ki motton surkh ho jaye.

  3. Onion , tomato garlic aur green chilli ko bareek kat kar motton me daal den. Ginger ko kaddukash karke daal den. Saath hi Garam masala powder aur lal mirch powder aur paani daal kar cooker ki lid laga den aur flame tez kar den jaise hi whistle aye flame off kar de.

  4. Whistle nikal jaye to cooker ki lid khol kar slow flame par 8-10 min. cook kren. Motton do pyaza taiyyar....enjoy..



1. Heat oil in a cooker. Add chopped onion, black cardamom, green cardamom, cloves, cinnamon stick, bay leaf and black pepper. Fry till the onion change colour.

2. Add motton and garlic paste fry till the oil separate from the motton.

Cut the onion, green chilli , tomatoes and crushed the garlic.

Add garam masala powder, red chilli powder, grated ginger and chopped ingredients in cooker and add 1/2 cup water cover the lid. Cook on high flame. After one whistle turn over the flame.

Open the lid and cook it in medium flame about 8-10 min. and stirring occasionally. Swich off the flame.

Serve hot with chapati or naan...:-)

Malai laddu

Ingredients

condensed milk                 100 gm
paneer (cottage cheese) 250 gm.
yellow colour
Cardamom                           4-5

Method:

1. Paneer ko achchi tarah mash karen.

2. Usme condensed milk daal kar slow and high flame par chalate hue pakayen.

3. Jab thick ho jaye aur ghee alag hone lage to flame off kar de. Cardamom pees kar usme mila len.

4. Jab thanda ho jaye to iske laddoo bana len. Aur kishmiah se saja de. Yammy malai laddo taiyyar...:-)


Mash paneer veary well.


2.Add condensed milk and colour, cook on slow flame, stirring continuously.


Cook till thick and sides leave. Add cardamom powder and remove from flame.Mix well.


7.Cool. Make ladoos.


Decorate and serve with smile :-)

Drum of heaven


Ingredients

Chicken legs                4-5
Onion paste                  1 tblspn
Ginger-garlic paste      1tblspn
Garam masala powder 1/2 tblspn
Red chill paste               1 tspn
Soya sauce                     1 tblspn
Vinegar                             1/2cloves
All purpose flour             1 tblspn
Corn flour                         1 tblspn
Salt to taste
Oil for frying

For sauce

Shezwn sauce                 2-3 tblspn
Spring onion chopped   2
Ginger grated                   1"
Garlic chopped                 3-4 cloves
Olive oil                              2 tblspn

Method

1.chicken legs ko saaf karke usme onion paste,ginger-garlic paste,garam masala powder, soya sauce,vinager aur salt milakar 2-3 ghante ke liye marinate kar ke fridge me rakh den.

2.ek bowl me maida, corn flour aur red chilli paste mix karke thode se pani ke sath batter taiyyar karen aur usmen merinated chicken dal kar achche se mix karen.

3.kadhaie me oil garm karen .usme chicken ko sunahra hone tak medium flame par fry karen.

4.ek dosre pan me olive oil garm karen usme spring onion ka white wala part,ginger aur garlic ko daal den.

5.ab usmen shezwan sauce add karen aur achchi tarah mix karen.ab usmen fry chicken leg add kare ,achchi tarah chalayen.spring onion ka green wala part add kare aur garma garm serve karen.

Marinate the chicken leg with onion paste, ginger-garlic paste, garam masala powder, soya sauce, vinegar and salt. Keep it in refrigerator about 2-3 hours.

In a bowl add maida, corn starch and red chilli paste mix well. Add water to make smooth batter, add chicken legs in it.

Fry leg piece in hot oil till golden brown.

Heat olive oil in another pan. Add white part of spring onion, garlic and ginger saute well.

Add shezwan sauce mix well.

Now add fried chicken leg and stir well. Add green part of spring onion cook about 2-3,min. Serve hot.
