Instant chole masala

Ingredients

Chickpeas, soaked overnight  1 cup
Onions, grated                             2 large
Finally chopped tomatoes        2 large               Ginger-garlic paste                    1 tspn
Green chilli                                  2-3
Red chilli powder                       1 tspn
Dry mango powder                   1 tspn
Cumin powder                           1 tspn Coriander powder                    1 tspn
Everst chole masala                2-3 tblspn
Salt to taste
Oil

Method:

1.Put the soaked chickpeas in a pressure cooker. add salt and sufficient water and cook until soft and tender.

2.Drain and reserve the water and set it aside.

3.Heat oil in a pan. Add grated onions and ginger- garlic paste and fry until it turns golden brown. Add chopped green chilli stir well.

4.Add tomatoes and saute until the oil seperates. Add chilli powder,turmeric powder, coriander powder, cumin powder, and mango powder and mix well

5. Now add evrest chole masala mix well. Add the drained chickpeas and mix well.

6.Add the strained water depending on the thickness of the gravy required. Cook about 4-5 mins. and switch off the flame.

Garnish with fresh coriander and serve hot along with hot puri or jeera rice.


Beans with apple

Ingredients

French beans                        500 gm
Onion                                      1 medium
Tomato                                   1 small
Apple                                       1/2
Ginger-garlic paste                1 tspn
Red chilli powder                   1 tspn
Garam masala powder          1 tspn
Salt                                            to taste
Oil

Method

1.Ek pan me oil garm kare .Ab usme kati hui onion add karen. Onion pink hone lage to usme ginger-garlic paste daal den.

2.Ab usme kati hui beans ,red chilli powder, garam masala powder aur namak daal kar achchi tarah mix karen.slow flame par cook karen.

3.Beans pak jaye to isme tamatar aur seb ka paste bana kar daal den.5-6 min. tak cook karen.garma garam serve karen.

Reshmi paneer kofta



Ingredients

Grated paneer                     1/2 cup
Boiled potatoes                      3-4 large
Chopped onion                  1 large
Chopped tomatoes           2-3 medium
Chopped green chillies    1-2
Cumin seeds                      1 tblspn
Black pepper                      7-8
Green cardamom              1-2
Clove                                    1-2
Red chilli powder               1 tblspn
Garam masala powder      1 tspn
Fresh cream                        1/2 cup
Cashew                                6-7
Chat masala                        1/3 tspn
Salt to taste
Oil for fry

Method

1.In a bowl mash potatoes and keep aside.

2.In another bowl take paneer. Add chopped green chillies, chat masala and salt mix properly.

3.Take 2 tblspn mashed potato and make a ball, flatten it on your palm and place 1 tblspn paneer in the center. Gather the edges and shape into a ball. Follow thensame process for the remaining balls n keep a side.

4. Heat oil for deep frying, drop the balls in and fry till golden brown. Drain on an absorbent paper.

5.In another pan heat oil. Add chopped onion saute 2-3 minute. Add cumin, black pepper, clove, cardamom stir well.

6.Add chopped tomatoes and cook well add cashew nut. Turn off the flame and leave the mixture to cool down.

7.Make a paste of the mixture and add in pan. Add the cream and cook for two minutes and turn off the flame.

8.Add balls in gravy and serve immediately.

Aaloo gosht

Ingredients

Motton                          250 gm
Chopped Onion           2 medium
Bayleaf                          1
Green cardamom        2
Black cardamom         1
Cloves                           2
Cinnamon stick           1
Garlic paste                  1 tbsp
Curd                               2 to 3 tbsp

For the gravy :

Onion                         1 medium (for paste)
Ginger-garlic paste  1 tbsp
Garam masala
powder                      1 tsp
Coriander powder    1 tsp
Potatoes                    2
Salt to taste
Oil

Method

1.Peel, wash and cut the potatoes in
cubes. Fry them and keep aside.

2. Wash mutton and set aside. Heat oil in
a cooker. Add onion and whole spices,
saute till onion changes colour.

3. Add mutton pieces, garlic paste and
salt, roast it very well. Now add curd and
stir continuously.

4. Make a paste of onion. Add in cooker.
Add ginger-garlic paste, garam masala
powder, coriander powder and fry till oil
separate from the masala.

5. Now add fried potatoes and some water, cover the lid, cook about 5  minutes over medium flame. Serve hot with chapaties or rice.
