Zarda / Sweet rice


Basmati rice 500 gm
khoya 1 cup
Sugar 250 gm( as u like)
Cashew nut 10-15
Raisins 10-12
Orange food colour 1/3 tspn
Green Cardamom 3-4
Cloves 2-3


  1. Chawal ko dho kar 1-2 ghante ke liye bhiga den.

  2. Ek pan me paani boil kare usmen colour add karen.jab paani boil ho jaye to usmen rice daal den.
  3. Jub rice pakne men halki si kasar rah jaye to flame off kar de.

  4. Rice ko malmal ke kapde se chankar thande paani se dho den.

  5. Ek bade pan men thoda sa ghee garm karke usme kaju aur kishmish fry karke alag rakh de .ab us pan me long aur ilaychi daalen aur flame band kar den.

  6. Ab pan me ek layer rice uske upar suger,kaju ,kishmish aur khoya lagaye .aise hi do layer aur lagaen.

  7. Ab use pahle 2-3min. tez flame par aur baad me low flame par cook karen. Suger melt hone lage to beech - 2 men 1-2 baar chala de ki suger achchi tarah mix ho jaye.

  8. zarda tayyar.aap isko dahi ya cream ke saath thanda ya garm jaisa chahen serve karen.

  9. Note. Ismen aap orange ke chilke bhi barik cut karke thode se daal sakete hain isse khushboo aur taste dono achcha ho jata hai.

    1. Wash the rice, soak it for 1-2 hours and drain the water completely.

    2. Heat sufficient water in a deep pan. Add food color and bring it to a boil. . Then add the drained rice and boil on medium heat until the rice is about three forths done. Drain and rinse with water and set aside.

    3.Heat two tablespoons ghee in a pan add cashewnuts and raisins saute till golden. Set aside.

    4.In a same pan,add cardamom and cloves in ghee.

    5.Now spread a portion of rice. Sprinkle one-third of the sugar, one tablespoon ghee, one-third the khoya, one-third the fried nuts and a few dropsnof rose water.

    6. Repeat the layers twice. Turn the heat on high and stand over the pan.The sugar will start melting right away.gently toss the rice so that it is all well
    mixed together.

    7.Cover the pan with lid and put it on very low heat for about 8-10 minutes
    so that the rice gets steamed nicely.

    8.Serve hot or cold with cream or curd.
