Reshmi paneer

Ingredients

Paneer                                 500 gm
Onion                                   1 medium
Tomato                                1 medium
Ginger-garlic paste            1 tblspn
Cumin seeds                       1 tspn
Black pepper                        4-5
Red chilli powder                1 tspn
Turmeric powder                 1/2 tspn
Garam masala powder       1 tblspn
Fresh cream                         1/2 cup
Salt                                         to taste
Oil

Method

1.Heat oil in a kadhai.Add cumin seed,black pepper and chopped onion saute well.

2.Add ginger-garlic paste,chopped tomato ,turmeric powder ,red chilli powder ,garam masala powder and fresh cream mix well.Now turn off the flame and let the mixture to cool down.

3.In a grinder make the puree of the mixture and add in kadhaie .

4. Cut cottage cheese into thick finger.Add in gravyi ,cook it about 5-6 min.serve hot.

Bread-egg pizza







Ingredients

Bread slice 1
Egg 1
Cheese slice 1
Dry herbs 1
Salt to taste to taste

Method


  1. Ek pan me oil garm karen .usme egg daalen.
  2. uske upar bread ki slice rakhen.usko palten,ab uske upar cheese slice rakhen.
  3. herbs aur namak daale thodi der dhak den.cheese melt ho jaye to flame off kar de .garma garrm serve kren.
  4. Note. Aap chahe to isme veg. bhi add kar sakte hai.


Mutton qorma







Ingredients

Mutton 1/2 kg
Onion chopped 4 medium
Onion for paste 1 medium
Ginger paste 1 tblspn
Garilic paste 2 tblspn
Coriander powder 1 tspn
Red chilli powder 1 tspn
Garam masala powder 1 tspn
Bay leaf 1
Black cardamom 1
Green cardamom 2
Cloves 3-4
Cinnamon stick 1"
Curd 100 gm
Salt to taste to taste
Oil

Method


  1. Mutton ko achchi tarah dho len..Tel garm kare usme sabhi sabut masale aur kati huyi pyaz daalen
  2. jab pyaz gulabi hone lage to usme moton daal den saath-saath 1 tblspn garlic paste bhi daal den.achchi tarah mix kare aur medium flame par pakaye.
  3. jub mutton ka pani khushk(sookh) ho jaye to usme dahi daal kar achchi tarah bhune. Tab tak bhune jub tak oil alag n ho jaye
  4. Pyaz ko grind karke paste banaye aur usko mutton me add karen.1 tblspn garlic paste, ginger paste ,coriander piwder,red chilli powder bhi sath me daal de aur achchi tarah mix karen.
  5. 10-15 min. tak masale ko low flame me bhunen ,jab masale achchi tarah bhun jaye to usme sufficient water add karen cooker ka dhakkan band karke 4-5 min.tak pakayn.
  6. garma garm naan ya chapati ke saath serve karen.
  7. Note. Kabhi-kabhi mutton masala tayyar hone ke saath hi gal jata hai.agar aisa ho to bina dhakkan band kiye thoda sa garm pani add karen .2-3 min baad flame band kar den.


Qubooly







Ingredients

Soaked rice 2
Soaked chana dal 1 cup
Onion 1 medium
Cumin seeds 1 tspn
Black pepper 5-7
Green cardamom 1-2
Black cardamom 1
Cinnamon stick 1"
Bay leaf 1
Salt to taste
Ghee 1

Method


  1. Heat 3 tblspn ghee in a cooker. Add cumin seeds,black cardamom,green cardamom, bayleaf, cinnamon stick, black pepper and onion saute till onion turn pink.
  2. Now add soaked chana daal and rice fry well. Add salt and 3-4 cup water cover the lid.
  3. After one whistle turn the flame low cook about 5-10 min.Serve with green chutney, raita and papad.


Vada paw

Ingredients

Boil potatoes
Peeled and mashed                                5-6
Garlic                                                          8-10 cloves
Green chillies                                            4-5
Asafetida                                                     a pinch
Lemon juice                                                1 tblspn
Fresh coriander leaves chopped            1/4 bunch
Red chutney
Salt to taste
Oil to fry
Pavs

For batter

Gram flour                                             1 cup
Turmeric powder                                  1/2 tspn
Red chilli powder                                  1/2 tspn
Salt to taste

Method 

For vada

1.Make a paste of green chillies and garlic.

2.In a bowl add garlic-green chilli paste,potatoes,asafetida, lemon juice ,coriander leaves and salt mix well.

3.Divide into 8 equal portions and make balls.

4.In a bowl add gram flour,turmeric powder,red chilli powder,and salt mix well.

5.Add sufficient water and whisk to make a coating consistency batter.

6.Heat oil in a kadhaie.Dip the potato balls in the batter and deep fry in hot oil till golden brown.

7.Drain on absorbent paper and keep aside.

To serve

1.Slice each pav into half and spread some red chutney inside.

2.Place one vada in each pav and serve.


                                          


Dhoie ki daal


Ingrediants:
Black gram skinned(soaked)1 cup
Onion 1 small
Bayleaf 1
Green cardamom 1-2
Black cardamom 1-2
Cloves 1-2
Black pepper 5-6
Ginger-garlic paste 1tbspn
Garam masala powder 1 tspn
Salt to taste
Ghee 2 tbspn

For tempering

Ghee 2 tbspn
Chopped onion 1small
Cumin seeds 1tspn

Method:
1.   Heat ghee in a pan.Add chopped onion, black cardamom, green cardamom, cloves, black pepper and bayleaf saute till onion change colour.
2.   Now add ginger-garlic paste stir well. Add chopped green chilli, garam masala powder mix well.
3.   Add soaked daal and fry few minute, add salt and 1/2 cup water cover the lid.
4.   After 1 whistle turn the flame low and cook daal about 4-5 min.
5.   In a pan heat ghee. Add cumin seeds and chopped onion saute till onion turn brown. Pour the tadka over daal and serve hot.

Aaloo masala

Ingredients

Potato                                   3-4 large
Tomato                                 2 medium size
Onion                                    2 medium size
Curd                                      2 tblspn
Suger                                    1/2 tspn
Salt                                        to taste
Oil

Method

1.Peel ,wash and cut the potatoes.

2.Heat oil in a cooker. Add chopped onion saute well.

3.Add potatoes ,chopped tomatoes and mix well.

4.Add curd ,red chilli powder,Turmeric powder ,salt and some suger mix well.

5.Add some water and cover the lid. After one whistle turn the flame low.Cook it about 3-4 min.

6.Serve hot with chapaties or fried rice.



Arhar daal fry

Ingredients
Arhar daal                            1/2 cup
Garlic                                    5
Tomato                                 1 meadium
Turmeric powder                1/2 tspn
Red chilli powder                1 tspn
Salt                                         to taste
Oil                                           2 tblspn

For tempering

Garlic cloves                         7-8
Cumin seeds                        1 tspn
Mustard seeds                     1 tspn
Dried red chilli                       1
Ghee                                        2 tblspn

Method

1.Daal dho kar bhiga de.Ek cookar me 2 tblspn oil garm karen usmen kata hua garlic daal kar saute karen.jub brown ho jaye to turmeric aur red chilli powder add kare.

2.Ab usme kata hua tamater aur namak daalen .jub tamater gal jaye to usme daal aur 2 se 3 cup pani daal kar lid laga den.

3.Whistle aane ke bad dhimi aanch par 10_15 min. tak pakayen.

4.ek pan me 2 tblspn ghee garm kare usme garlic, cumin seeds , musterd seed aur sukhi lal mich fry kare usko daal me daal den.


Tamatar wali gobhi/cauliflower cooked with Tomatoes




Ingrediants

Gobhi 1 small
Potatoes 2 (cut in pieces)
Chopped Onion 2 Medium size
Tomatoes 2 Medium size
Ginger-garlic paste 1 tblspn
Cumin seeds 1/2 tspn
Turmeric powder 1/2 tspn
Red chill powder 1/2 tspn
Garam masala powder 1 tspn
Salt to taste
Oil

Method


  1. Cut the cauliflower into bite size florets. Take water in a bowl add 1/2 tspn vinegar, soake cauliflower in it about 15 min.

  2. Heat oil in a kadhaie. Add onion and cumin seeds saute till onion turn pink.

  3. Wash cauliflower and add in kadhaie. add chopped potatoes, ginger-garlic paste, turmeric powder, red chilli powder,garam masala powder and salt mix well. cover the lid.

  4. In a grinder make tomato paste. add in kadhaie and mix well. cook it about 8-10 min. over low flame.

  5. Serve with chapaties or fried rice.

Sarson ka saag

Ingredients

Sarson ka saag                         250 gm
Urad daal                                    3 tblspn
Tomato                                       2 medium
Onion                                          2 medium
Green chilli                                 3-4
Ginger- garlic paste                  1 tblspn
Cumin seeds                             1 tspn
Butter                                          2 tblspn
Salt                                              to taste
Oil   


Method

1.Sarson ke saag ko achchi tarah dho kar kaat len.


2.Cooker me tel garm kare usme kati huyi pyaz daal kar fry karen.


3.pyaz fry hone ke baad sarson ka saag ,urad daal ,tamater ,hari mirch,ginger -garlic paste aur namak add karen.1/2 up pani daale aur lid band kar den.

4.whistle aane ke baad 10 min. low flame me cook karen.


5.Ek pan me oil garm kare ,usme cumin seeds aur kati huyi pyaz daale.

6.Saag thanda ho jaaye to usko mixer me grind karen.


7.Onion fry ho jaye to usme pisa hua saag dal de thodi der pakaye .usmen makhan daale.


8.Apni man pasand makke ya besan ki roti ke saath serve karen.

Whole masoor dal /kaali daal

Ingredients

Whole masoor daal            1 cup
Chopped Tomato                1 large
Chopped Onion                   1 medium
Ginger-Garlic paste            1 tblspn
Red chilli powder               1 tspn
Garam masala powder      1/2 tspn
Bay leaf                                 1
Black cardamom                 1
Green cardamom                2
Cloves                                   2
Cinnemon stick                   1"


1.Heat oil in a cooker.Add chopped onion,black cardamom, green cardamom,bay leaf and cloves saute till onion change colour.


2.Now add ginger-garlic paste,red chilli powder,garam masala powder and salt stir well.

3.Add chopped tomato mix well.fry again for a few minutes till the tomatoes become soft.Now Add soaked masoor daal and 2-3 cup water and cover the lid, cook over medium flame about 15-20 min.


For tadka

1.In a pan heat 2-3 tblspn ghee add chopped onion saute till onion turn brown. Pour the tempering over daal.

2.Now masoor dal is ready to be served
with chapties or rice.

Garlic-green chilli chutney

Ingredients

Garlic clove                                15-20
Green chilli                                 10-12
Onion                                           1 large
Tomato                                        2 small
Salt                                               to taste
Oil

Method       

1.Heat oil in kadhaie,add chopped onion saute till it change colour.

2.Make a coarse paste of garlic- green chilli in a grinder and add it in kadhaie stir occasionally.

3.Add chopped tomato cook about 4-5 min. over low flame .Serve with besani.

Louki ka halwa




Ingrediants

Grated bottle gourd 2 cup
khoya 1/2 cup
Milk 1 cup
Sugar 1/2 cup
Green Cardamom 1-2
Cloves 1-2
Ghee 3-4 tblspn



Method

  1. kadhai me ghee garm kare usme cardamom aur cloves daale.
  2. Ab usmen kaddukash ki huyi louki daale.usko tab tak bhune jub tak ghee louki se separate n ho jaayen.
  3. Ab usme milk add kare tez flame pe bhune phir usme khoya add kare aur achchi tarah bhunen.
  4. Ab usme sugar add karen jub sugar achchi tarah mil jaye to flame band kar den.
  5. Rabdi aur mevon se saja kar serve karen.

  6. English

  7. Heat ghee in a kadhai,add cardamon and cloves saute well.
  8. Now add greated bottle gaurd stir occasionally .cook over medium flame untill  the ghee sapret from bottle gaurd.
  9. Now add milk and cook it over high flame.add khoya and stir well.
  10. Now add sugar.when sugar is dissolve turn off the flame.
  11. Sarve, garnish with rabdi and dry fruits.

Zarda / Sweet rice


Ingrediants

Basmati rice 500 gm
khoya 1 cup
Sugar 250 gm( as u like)
Cashew nut 10-15
Raisins 10-12
Orange food colour 1/3 tspn
Green Cardamom 3-4
Cloves 2-3
Ghee


Method


  1. Chawal ko dho kar 1-2 ghante ke liye bhiga den.

  2. Ek pan me paani boil kare usmen colour add karen.jab paani boil ho jaye to usmen rice daal den.
  3. Jub rice pakne men halki si kasar rah jaye to flame off kar de.

  4. Rice ko malmal ke kapde se chankar thande paani se dho den.

  5. Ek bade pan men thoda sa ghee garm karke usme kaju aur kishmish fry karke alag rakh de .ab us pan me long aur ilaychi daalen aur flame band kar den.

  6. Ab pan me ek layer rice uske upar suger,kaju ,kishmish aur khoya lagaye .aise hi do layer aur lagaen.

  7. Ab use pahle 2-3min. tez flame par aur baad me low flame par cook karen. Suger melt hone lage to beech - 2 men 1-2 baar chala de ki suger achchi tarah mix ho jaye.

  8. zarda tayyar.aap isko dahi ya cream ke saath thanda ya garm jaisa chahen serve karen.



  9. Note. Ismen aap orange ke chilke bhi barik cut karke thode se daal sakete hain isse khushboo aur taste dono achcha ho jata hai.



    1. Wash the rice, soak it for 1-2 hours and drain the water completely.

    2. Heat sufficient water in a deep pan. Add food color and bring it to a boil. . Then add the drained rice and boil on medium heat until the rice is about three forths done. Drain and rinse with water and set aside.





    3.Heat two tablespoons ghee in a pan add cashewnuts and raisins saute till golden. Set aside.




    4.In a same pan,add cardamom and cloves in ghee.




    5.Now spread a portion of rice. Sprinkle one-third of the sugar, one tablespoon ghee, one-third the khoya, one-third the fried nuts and a few dropsnof rose water.

    6. Repeat the layers twice. Turn the heat on high and stand over the pan.The sugar will start melting right away.gently toss the rice so that it is all well
    mixed together.

    7.Cover the pan with lid and put it on very low heat for about 8-10 minutes
    so that the rice gets steamed nicely.




    8.Serve hot or cold with cream or curd.

Louki Chane ki daal



Ingredients

Bottle gourd                      300 gm
Chana dal                          50 gm(1/4 cup)
Onion                                 1 medium
Tomato                              1 medium
Ginger-garlic paste         1 tblspn
Turmeric powder           1/4 tsp
Red chilli powder           1/4 tsp
Nigella                              1/4 tsp
bay leaf                            1
green cardamom           2
black cardamom           1
cinnamon stick              1"
cloves                               2




1.Peel,wash and cut the bottle gaurd in cubes.




2.Wash and soak chana daal for an hour.




3.Heat oil in cooker add nigella,bay leaf ,green cardamom, black cardamom, cinnamon stick and cloves saute well.




4.Make a paste of onion add in cooker.Add ginger -garlic paste,turmeric powder ,red chilli powder mix well.




5.Now  add bottle gaurd ,chana daal and 2-3 cup water .cover the lid.After one whistle turn the flame low  cook about 15-20 min.




6.Heat 2 tblspn ghee in a pan.Add cumin seeds onion saute till onion turn golden brown.




7.Pour over daal .sprinkle roasted cumin powder serve hot with rice or chapaties.
