Shakarkand ki kheer

Ingredients

Shakarkand                          1/2 kg
Milk                                        2 liter
Sugar                                     1 cup
Green Cardamom                4

Method

1. Shakarkand ko boil karen. Phir uske chilke utar kar thode se doodh daal kar mixer me pees len.

2. Ek bade bartan men doodh ko ubal len. Ubalne ke bad usme pisi huyi shakarkand daal kar low-high flame par pakayen.

3. Jab kheer gadhi ho jaye to usmen sugar add kar den. Kuch der pakaye phir ilaychi pees kar daal den flame off kar den. Mewon se saja kar serve karen.


1. Boil sweet potatoes. Remove the skin and cut it in to pieces.


Grind sweet potatoes in grinder with some milk.


Boil milk and add sweet potato paste in it. Cook over low and high flame, stir continuously.


When kheer become thick add sugar and stir well. Turn off the flame. Make powder of green cardamom and add in kheer.


Serve garnish with dry fruits..

Haryaali fish fry





Ingredients

Rohu fish 1 kg
Fresh coriander 1 bunch
Garlic clove 8-10
Ginger 2"
Roasted cumin powder 1 tblspn
Red chilli powder 1 tspn
Garam masala powder 1 tspn
Kastoori methi 1 tspn
Curd 2 tblspn
Corn starch 3 tblspn
Salt to taste  
Oil to fry  

Method


  1. Fish ko achchi tarah dho kar usme thodi der namak aur garlic paste laga kar 15 min. ke liye rakh den. Phir usko dho len isse uski badbu khatm ho jayegi.
  2. Dhaniya, adrak, lahsun aur hari mairch ko grinder me pees len. Ek pan me machli len uasme dhaniye ka paste, garam masala powder, red chilli powder, kastoori methi, zeera powder, dahi aur namak achchi tarah milakr 2-3 ghante ke liye fridge me rakh den.
  3. Ek kadhaie me oil garm karen. Fish pieces me corn flour achchi tarah mix karen. Oil me 2-3 fish pieces daal kar sunahra hone tak fry kren. Garma garam serve karen.


  4. Wash fish properly. In a grinder make paste of coriander leaves, garlic and green chilli. Add the mixture in fish.
  5. Add garam masala powder, red chilli powder, zeera powder, kastoori methi, curd and salt mix well. Keep it in refrigerator about 2-3 hours.


  6. Heat oil in kadhaie. Add corn flour in fish mix well. Fry fish pieces in hot oil til brown. Serve hot

Instant chole masala

Ingredients

Chickpeas, soaked overnight  1 cup
Onions, grated                             2 large
Finally chopped tomatoes        2 large               Ginger-garlic paste                    1 tspn
Green chilli                                  2-3
Red chilli powder                       1 tspn
Dry mango powder                   1 tspn
Cumin powder                           1 tspn Coriander powder                    1 tspn
Everst chole masala                2-3 tblspn
Salt to taste
Oil

Method:

1.Put the soaked chickpeas in a pressure cooker. add salt and sufficient water and cook until soft and tender.

2.Drain and reserve the water and set it aside.

3.Heat oil in a pan. Add grated onions and ginger- garlic paste and fry until it turns golden brown. Add chopped green chilli stir well.

4.Add tomatoes and saute until the oil seperates. Add chilli powder,turmeric powder, coriander powder, cumin powder, and mango powder and mix well

5. Now add evrest chole masala mix well. Add the drained chickpeas and mix well.

6.Add the strained water depending on the thickness of the gravy required. Cook about 4-5 mins. and switch off the flame.

Garnish with fresh coriander and serve hot along with hot puri or jeera rice.


Beans with apple

Ingredients

French beans                        500 gm
Onion                                      1 medium
Tomato                                   1 small
Apple                                       1/2
Ginger-garlic paste                1 tspn
Red chilli powder                   1 tspn
Garam masala powder          1 tspn
Salt                                            to taste
Oil

Method

1.Ek pan me oil garm kare .Ab usme kati hui onion add karen. Onion pink hone lage to usme ginger-garlic paste daal den.

2.Ab usme kati hui beans ,red chilli powder, garam masala powder aur namak daal kar achchi tarah mix karen.slow flame par cook karen.

3.Beans pak jaye to isme tamatar aur seb ka paste bana kar daal den.5-6 min. tak cook karen.garma garam serve karen.

Reshmi paneer kofta



Ingredients

Grated paneer                     1/2 cup
Boiled potatoes                      3-4 large
Chopped onion                  1 large
Chopped tomatoes           2-3 medium
Chopped green chillies    1-2
Cumin seeds                      1 tblspn
Black pepper                      7-8
Green cardamom              1-2
Clove                                    1-2
Red chilli powder               1 tblspn
Garam masala powder      1 tspn
Fresh cream                        1/2 cup
Cashew                                6-7
Chat masala                        1/3 tspn
Salt to taste
Oil for fry

Method

1.In a bowl mash potatoes and keep aside.

2.In another bowl take paneer. Add chopped green chillies, chat masala and salt mix properly.

3.Take 2 tblspn mashed potato and make a ball, flatten it on your palm and place 1 tblspn paneer in the center. Gather the edges and shape into a ball. Follow thensame process for the remaining balls n keep a side.

4. Heat oil for deep frying, drop the balls in and fry till golden brown. Drain on an absorbent paper.

5.In another pan heat oil. Add chopped onion saute 2-3 minute. Add cumin, black pepper, clove, cardamom stir well.

6.Add chopped tomatoes and cook well add cashew nut. Turn off the flame and leave the mixture to cool down.

7.Make a paste of the mixture and add in pan. Add the cream and cook for two minutes and turn off the flame.

8.Add balls in gravy and serve immediately.

Aaloo gosht

Ingredients

Motton                          250 gm
Chopped Onion           2 medium
Bayleaf                          1
Green cardamom        2
Black cardamom         1
Cloves                           2
Cinnamon stick           1
Garlic paste                  1 tbsp
Curd                               2 to 3 tbsp

For the gravy :

Onion                         1 medium (for paste)
Ginger-garlic paste  1 tbsp
Garam masala
powder                      1 tsp
Coriander powder    1 tsp
Potatoes                    2
Salt to taste
Oil

Method

1.Peel, wash and cut the potatoes in
cubes. Fry them and keep aside.

2. Wash mutton and set aside. Heat oil in
a cooker. Add onion and whole spices,
saute till onion changes colour.

3. Add mutton pieces, garlic paste and
salt, roast it very well. Now add curd and
stir continuously.

4. Make a paste of onion. Add in cooker.
Add ginger-garlic paste, garam masala
powder, coriander powder and fry till oil
separate from the masala.

5. Now add fried potatoes and some water, cover the lid, cook about 5  minutes over medium flame. Serve hot with chapaties or rice.

Reshmi paneer

Ingredients

Paneer                                 500 gm
Onion                                   1 medium
Tomato                                1 medium
Ginger-garlic paste            1 tblspn
Cumin seeds                       1 tspn
Black pepper                        4-5
Red chilli powder                1 tspn
Turmeric powder                 1/2 tspn
Garam masala powder       1 tblspn
Fresh cream                         1/2 cup
Salt                                         to taste
Oil

Method

1.Heat oil in a kadhai.Add cumin seed,black pepper and chopped onion saute well.

2.Add ginger-garlic paste,chopped tomato ,turmeric powder ,red chilli powder ,garam masala powder and fresh cream mix well.Now turn off the flame and let the mixture to cool down.

3.In a grinder make the puree of the mixture and add in kadhaie .

4. Cut cottage cheese into thick finger.Add in gravyi ,cook it about 5-6 min.serve hot.

Vada paw

Ingredients

Boil potatoes
Peeled and mashed                                5-6
Garlic                                                          8-10 cloves
Green chillies                                            4-5
Asafetida                                                     a pinch
Lemon juice                                                1 tblspn
Fresh coriander leaves chopped            1/4 bunch
Red chutney
Salt to taste
Oil to fry
Pavs

For batter

Gram flour                                             1 cup
Turmeric powder                                  1/2 tspn
Red chilli powder                                  1/2 tspn
Salt to taste

Method 

For vada

1.Make a paste of green chillies and garlic.

2.In a bowl add garlic-green chilli paste,potatoes,asafetida, lemon juice ,coriander leaves and salt mix well.

3.Divide into 8 equal portions and make balls.

4.In a bowl add gram flour,turmeric powder,red chilli powder,and salt mix well.

5.Add sufficient water and whisk to make a coating consistency batter.

6.Heat oil in a kadhaie.Dip the potato balls in the batter and deep fry in hot oil till golden brown.

7.Drain on absorbent paper and keep aside.

To serve

1.Slice each pav into half and spread some red chutney inside.

2.Place one vada in each pav and serve.

Aaloo masala

Ingredients

Potato                                   3-4 large
Tomato                                 2 medium size
Onion                                    2 medium size
Curd                                      2 tblspn
Suger                                    1/2 tspn
Salt                                        to taste
Oil

Method

1.Peel ,wash and cut the potatoes.

2.Heat oil in a cooker. Add chopped onion saute well.

3.Add potatoes ,chopped tomatoes and mix well.

4.Add curd ,red chilli powder,Turmeric powder ,salt and some suger mix well.

5.Add some water and cover the lid. After one whistle turn the flame low.Cook it about 3-4 min.

6.Serve hot with chapaties or fried rice.



Arhar daal fry

Ingredients
Arhar daal                            1/2 cup
Garlic                                    5
Tomato                                 1 meadium
Turmeric powder                1/2 tspn
Red chilli powder                1 tspn
Salt                                         to taste
Oil                                           2 tblspn

For tempering

Garlic cloves                         7-8
Cumin seeds                        1 tspn
Mustard seeds                     1 tspn
Dried red chilli                       1
Ghee                                        2 tblspn

Method

1.Daal dho kar bhiga de.Ek cookar me 2 tblspn oil garm karen usmen kata hua garlic daal kar saute karen.jub brown ho jaye to turmeric aur red chilli powder add kare.

2.Ab usme kata hua tamater aur namak daalen .jub tamater gal jaye to usme daal aur 2 se 3 cup pani daal kar lid laga den.

3.Whistle aane ke bad dhimi aanch par 10_15 min. tak pakayen.

4.ek pan me 2 tblspn ghee garm kare usme garlic, cumin seeds , musterd seed aur sukhi lal mich fry kare usko daal me daal den.


Sarson ka saag

Ingredients

Sarson ka saag                         250 gm
Urad daal                                    3 tblspn
Tomato                                       2 medium
Onion                                          2 medium
Green chilli                                 3-4
Ginger- garlic paste                  1 tblspn
Cumin seeds                             1 tspn
Butter                                          2 tblspn
Salt                                              to taste
Oil   


Method

1.Sarson ke saag ko achchi tarah dho kar kaat len.


2.Cooker me tel garm kare usme kati huyi pyaz daal kar fry karen.


3.pyaz fry hone ke baad sarson ka saag ,urad daal ,tamater ,hari mirch,ginger -garlic paste aur namak add karen.1/2 up pani daale aur lid band kar den.

4.whistle aane ke baad 10 min. low flame me cook karen.


5.Ek pan me oil garm kare ,usme cumin seeds aur kati huyi pyaz daale.

6.Saag thanda ho jaaye to usko mixer me grind karen.


7.Onion fry ho jaye to usme pisa hua saag dal de thodi der pakaye .usmen makhan daale.


8.Apni man pasand makke ya besan ki roti ke saath serve karen.

Garlic-green chilli chutney

Ingredients

Garlic clove                                15-20
Green chilli                                 10-12
Onion                                           1 large
Tomato                                        2 small
Salt                                               to taste

Method       

1.Heat oil in kadhaie,add chopped onion saute till it change colour.

2.Make a coarse paste of garlic- green chilli in a grinder and add it in kadhaie stir occasionally.

3.Add chopped tomato cook about 4-5 min. over low flame .Serve with besani.

Louki ka halwa




Ingrediants

Grated bottle gourd 2 cup
khoya 1/2 cup
Milk 1 cup
Sugar 1/2 cup
Green Cardamom 1-2
Cloves 1-2
Ghee 3-4 tblspn



Method

  1. kadhai me ghee garm kare usme cardamom aur cloves daale.
  2. Ab usmen kaddukash ki huyi louki daale.usko tab tak bhune jub tak ghee louki se separate n ho jaayen.
  3. Ab usme milk add kare tez flame pe bhune phir usme khoya add kare aur achchi tarah bhunen.
  4. Ab usme sugar add karen jub sugar achchi tarah mil jaye to flame band kar den.
  5. Rabdi aur mevon se saja kar serve karen.

  7. Heat ghee in a kadhai,add cardamon and cloves saute well.
  8. Now add greated bottle gaurd stir occasionally .cook over medium flame untill  the ghee sapret from bottle gaurd.
  9. Now add milk and cook it over high flame.add khoya and stir well.
  10. Now add sugar.when sugar is dissolve turn off the flame.
  11. Sarve, garnish with rabdi and dry fruits.

Chilli Bhindi




Ingredients

  1. Bhindi                        250 gm
  2. Besan                        3-4 tblspn
  3. Onion                        1 medium
  4. Tomato                     1 medium
  5. Capsicum                  1 large
  6. Ginger-Garlic paste   1 tblspn
  7. Red chilli sauce         1 tblspn
  8. Soya sauce               1 tblspn
  9. Tomato sauce           1 tblspn
  10. Vinegar                     1 tblspn
  11. Salt to taste
  12. Oil to fry            

Method


1.Wash and cut the okra in 2" piece. In a bowl mix okra and besan.

2. Heat oil in kadhai fry okra and set aside.


3. Cut the Onion,tomato and capsicum in cubes.
4. Heat oil in a pan, add onion saute well.Now add capsicum and cook.add tomato and ginger-garlic paste mix well.

5. Now add tomato sauce, soya sauce, red chilli sauce, vinegar and salt mix well.


6. .Add fried bhindi cook about 4-5 min. over low flame Serve hot.

Besani / Besan ki roti


Ingrediants


Gram flour 1cup
Wheat flour 1/2 cup
Garlic - Green chillies chutney
Olive Oil

Method



    Method


    1.In a large bowl add gram flour and wheat flour mix well.


    2.Make a stiff dough by adding enough water.


    3.Divide the dough in eight portions and make balls. Roll out each ball into a 2-3 inch circle. Place the rolled roti on tawa. In few seconds roti will start changing color,turn roti over.


    4.Now place the roti on open burner using tong. Grill the roti from both sides until roti has golden brown spots.


    5.Take one  besani,Apply1 teaspoon olive oil on it.place finally chopped onion and tomato.

    Place 1tablspoon garlic-green chilli chutney .


    Serve hot .

Spicy jack fruit





Ingredients

Jack fruit (Boiled and cut in pieces) 250 gm
Chopped Onion 4-5 medium
Chopped green chilli 2-3
Bay leaf 1
Cinnamon stick 1"
Black cardamom 1

Cloves 2
Cumin seeds 1 tspn
Roasted cumin powder 1 tblspn
Roasted black pepper powder 1/2 tspn
Dry mango powder 1 tblspn
Red chili powder 1 tspn

Method


  1. Heat oil in a pan. Add whole spices mentioned above add onion saute till onion turn pink, add green chilli mix well.
  2. Add Boiled Jack fruit pieces. Add cumin powder, black pepper powder, dry mango powder, red chilli powder and salt stir continuously.
  3. Cook about 15-20 min. over low flame stirring occasionally. Serve hot with chapaties.

Aaloo chana masala








Ingredients

Chick peas(kabuli chana) 250 gm.
Boiled potatoes 3 medium
Chopped Onions 2 medium
Chopped Tomatoes 2 medium
Green Chilli 3-4
Ginger-Garlic paste 1 tblspn
Cumin seeds 1 tspn
Garam masala powder 1 tblspn
Red chilli powder 1 tblspn
Everest chole masala 1 tblspn
Coriander powder 1 tblspn
Roasted cumin powder 2 tblspn
Dry mango powder 1 tblspn
Salt to taste
Oil


Method


  1. Soak the chick peas in water overnight.
  2. Drain chick peas add 4-5 cup water and salt. Pressure cook for 15-20 minutes on high to low flame.
  3. Peel the boiled potatoes and cut them into one Inch cubes.
  4. Heat oil in a pan ,add cumin seeds,onion saute well till onion turn pink.add ginger -garlic paste, coriander powder,red chilli powder,garam masala powder,dry mango powder and everest chole masala powder and some water and stir.
  5. Add tomatoes and stir continuously,add potatoes and mix well.
  6. Add boiled chick peas with its stock to the masala.cook about 4-5 minutes or till the gravy thickness.
  7. Add roasted cumin powder mix well .Serve hot with poori, parathas or bhature.

Grilled potatoes in creamy gravy






Ingredients

Boiled Potatoes 4-5 medium
Chopped Onion 1 medium
Tomato 1 large
Ginger-Garlic paste 1 tblspn
Garam masala powder 1 tspn
Red chili powder 1 tblspn
Coconut 2-3 inch
Milk 1 cup
Salt to taste
Oil


Method


  1. Peel and cut the boiled potatoes in thin circle.
  2. In hot pan drizzle some oil and place the circles on it. Grilled the circle in both sides.
  3. Make a paste of tomato and coconut in grinder.
  4. Heat oil in another pan add chopped onion saute till turn pink,add Ginger-Garlic paste, tomato coconut paste and mix well.
  5. Add Garam masala powder,red chili powder ,salt mix and cook about 3-4, minute.
  6. Add milk and cook.After some time add grilled potatoes cook about 4-5 min. Turn off the flame.
  7. Serve hot with fried rice or chapati.

Vegetarian egg bhurji






Ingredients

Besan ka cheela 2-3
Onion 1 medium
Tomato 1 medium
Green chili 2-3
Chat masala powder 1 tspn
Salt to taste

Method


  1. Cut the besan chila into roughly equal size pieces.
  2. Heat oil in a pan add chopped onion saute till it turn pink.Add chopped tomato , chopped green chilies , chat masala powder and some salt , mix well.
  3. Now add chila pieces and mix ,cook for a minute .
  4. Serve hot with add some tomato sauce.
